 1/2 teaspoon celery seed
1/2 teaspoon dried oregano leaves
1 to 2-pounds boneless beef short rib
Directions:
Combine all the ingredients for the rub and blend well.
Liberally sprinkle the rub all over the ribs, then let them sit at room temperature for 30 minutes. Preheat smoker to 225o degrees F.
Place the ribs on the in the smoker. Smoke it until it reaches an internal temperature of 180o
Degrees F. Should take about four hours. Alternatively, you can pull the ribs off the grill when they reach 150o degrees F (should take about 2 hours) and serve them like a steak.
Once you have the ribs cooked to your liking, wrap them in plastic wrap or foil and put them somewhere that retains heat well – a cooler or oven will do fine – for 20 minutes while it rests.
Lastly, simply slice the ribs and serve with barbecue sauce.

 Homemade Sweet Italian Sausage (Mild or Hot)
Since I’m grilling (yes grilling) sausage for dinner this evening, how about a good sausage recipe! One of my wife’s favorite Sweet Italian Sausage, she likes the mild.
Ingredients:
3 pounds ground pork
3 tablespoons red wine vinegar
1 tablespoon sea salt
1 tablespoon freshly cracked black pepper 1 1/4 tablespoons dried parsley leaves
1 tablespoon granulated garlic
1 tablespoon granulated
onion
1 tablespoon dried basil
2 teaspoons smoked paprika
2 teaspoons crushed red
pepper flakes, or to taste
3/4 teaspoon ground or
whole fennel seed
1 teaspoon brown sugar
1/8 teaspoon dried oregano
1/8 teaspoon dried thyme
Directions:
Place the pork and red wine vinegar in a mixing bowl. Sprinkle with salt, black pepper, parsley, garlic pow- der, onion powder, basil, pa- prika, red pepper flakes, fennel seed, brown sugar, oregano, and thyme. Knead until flecks of spice are
evenly distributed through the sausage.
Divide the sausage into thirds, and form into 3 logs; wrap each in plastic wrap. Place wrapped sausage into a freezer bag before freezing, or store in refrigerator for at least 12 hours before cooking.
Serves 10 to 12
