Turkey Smoke 2020
Although COVID has limited contests in the northeast this year, it didn’t get in the way of the fall festivities at the Red, White, and Que contest on October 16th, 17th, and 18th in Jackson, NJ. That event included two KCBS Master Series contests, two KCBS Master of Ribs contests, a dessert contest, and a turkey contest.
The National Turkey Federation (NTF) donated the turkeys for the turkey smoke at part of their Turkey Smoke barbe- cue outreach program, the first time this program has run in the northeast. Beth Breeding, Vice President of Commu- nications & Marketing for NTF, said that ““Turkey really shines when it comes to the flavors of barbecue and its ver- satility makes it a natural fit for the competition setting and on menus, both at restaurants and in the backyard. We’ve seen Turkey Smoke
competition teams across the country bringing some delicious turkey dishes to the table – from the unique creations, such as Thanks- giving Turkey Egg Rolls, to simple, tender sliced smoked turkey breast. We encourage cooks to think outside the oven and try turkey on the smoker!”
Local Smoke BBQ, a restaurant and competition team out of Red Bank New Jersey, won the Turkey Smoke with deli- cious turkey egg rolls. The team consists of Loren Raab, Steve Raab, and Eric Keating, but the turkey entry was pri- mary Loren’s creation. She brined the turkey breast for twelve hours in a sugar and salt brine, used Local Smoke’s “Uncle Dicks” rub on it, and smoked it at 300 over cherry and maple for close to two hours.
They then created an eggroll with sliced turkey breast, homemade stuffing, turkey gravy, and cranberry sauce. It was all rolled into an egg roll and fried over charcoal until a golden brown.
The youngest competitor in the event was twelve year old Lacie Tarpy. This was not

a Kid’s Que event but Lacie not only held her own against the adults with an 11th place finish, but she beat her father Bob Tarpy from Big BOB’s Smokin’ Que. This was the first time a father and daughter were competing in an NTF Turkey Smoke, and they had a great time. Lacie has entered over five ancillary cate- gory cook offs, and wants to start her own backyard team when she is old

The Turkey Smoke was a fun end to a strange BBQ season, and the Northeast Barbecue Society is keeping our fingers crossed that we can get back to doing what we love in 2021.
