Ribs
disposable pan fitted with a cooling rack. Pour the beef broth around the ribs, being careful not to pour the liquid on top of the bark. Wrap the pan with heavy duty aluminum foil and place it back on the smoker to cook until the ribs reach an in- ternal temperature of about 203- 208 degrees, about 2-3 hours more. Begin checking the meat after 2 hours. Probe the ribs be- tween the bones to check for tenderness, you should feel little resistance as the thermometer
slides in and out. Remove the ribs from the cooker and open the foil to vent for 5 minutes. Carefully transfer the hot ribs from the pan to a new sheet of foil. Fold up the sides to securely wrap and place the ribs in a dry cooler to rest for about an hour.
To serve:
Use a large knife to slice between the bones and arrange on a platter.

  Ingredients:
4-5 lb. beef plate ribs 2 tbsp olive oil Apple juice
1 cup beef broth
For the rub:
Ingredients:
3 tbsp freshly ground black pep- per
2 tbsp kosher salt
2 tsp granulated garlic
2 tsp onion powder
2 tsp smoked paprika
Directions:
In a small bowl mix all the rub ingredients to combine. Set aside until ready to use.
Fire up the smoker/grill:
Prepare a smoker to cook at 300 degrees. Alternatively, you can set up a charcoal grill for indirect cooking: Light a charcoal chimney, and when the edges of the charcoal at the top of the chimney begin to ash over, dump the pile of hot coals onto 1 side of the grill to form your hot side (di- rect cooking), leaving the other side empty to form your cool side (indirect cooking), forming 2 zones.
For the meat:
Directions:
Trim the fat and silver skin from the meaty side of the ribs. Remove the membrane from the bone side and rub all over with the olive oil. Season the ribs with an even layer of the rub to coat all sides.
Place the ribs, bone side down directly on the grate and cook undisturbed for about 2 hours. Spritz with the apple juice and continue to cook for another hour. Once your ribs achieve the color that you are looking for, place them in a
