Spring has sprung and bar-
becue season is in full
bloom, as it should be — or
will be as soon as this
CaronaVirus threat is over. I
will begin with more new
recipes. One recipe we
rarely see is for a mop or
baste. Most people use
apple juice to add a little more flavor.
This mop is thin enough to be applied using a spray bottle. Other mops may have additional seasonings to help with flavor. But they are generally thin.
Super Mop/Baste
Ingredients:
2 cups filtered water
1 cup beef stock
1 cup chicken stock
1-12 ounce can beer (not light) 1/4 cup cider vinegar
1/4 cup Worcestershire sauce 1/4 cup soy sauce
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons MSG (optional) 1 large lemon sliced thinly
Directions:
Combine all of the ingredients in a saucepan. Bring to a boil, reduce heat and simmer for 30 minutes. Makes about 6 1/4 cups.
Sweet BBQ Rub Ingredients:
8 tablespoons white cane sugar

2 teaspoons lemon pepper 1/2 teaspoon cayenne pepper 1/2 teaspoon thyme (crushed) 1/2 teaspoon onion powder
Directions:
Combine all of the ingredients and blend well.
Kansas City Barbecue Sauce
Ingredients:
32 ounce bottle ketchup 1/2 cup apple juice
1/2 cup apple cider vinegar 1/2 cup brown sugar
2 tablespoons chili powder
2 tablespoons onion powder
1 tablespoon garlic powder
1 tablespoon salt
1 tablespoon ground black pepper 2 teaspoons ground mustard
2 teaspoons ground allspice
2 teaspoons chipotle powder
Directions:
Combine the dry ingredients in a 4 quart saucepan, add the liquid ingredients and dissolve the dry ingredients. Add ketchup and bring to a boil; reduce heat and simmer, stir- ring occasionally for 30 minutes.
