Q: How long have you been competing?
A: We started in 2013 and just finished our 7th sea- son.
Q: What was it that got you interested in having a team and getting into the BBQ competition cir- cuit?
A: I was given a smoker for a Father’s Day gift by my wife Ginny around 2005. I was trying to find any infor- mation I could on how to cook good barbecue. I came across Paul Kirk’s book, Championship Barbecue. After reading the stories he told about his career on the barbecue circuit, I knew that when I thought I was good enough cooking barbecue, I wanted to try my hand at competing.
Q: You are a two person team, how do you do it? A: Being a husband and wife team, we knew that the only way we could be successful was if we each shared responsibilities. We both share the responsibility of most steps in the competition process, from picking out meats, to sharing individual steps performed on every category. Whether you have multiple team members or just 2, making sure each team member
knows what needs to be done and when, really makes things much easier and leads to more success.
Q: Speaking of challenges - what is the greatest challenge for you at an event?
A: We believe that typically the greatest challenge is procuring the meat that we’re happy with for the competition. We really strive to find the best quality meat we can find. Many times we find ourselves going to multiple stores over several days, or more, just to find the type of quality meat that we think we’ll need to give us the best chance to be successful.
