sooner. The depth of flavors the spray pro- vided was noticeable, but was it enough to bring the first-place trophy? Only time will tell, but it is defi- nitely worth trying to find out.
Now to home use. Can a product so unique as Duck Fat Spray find itself into the homes of the av- erage backyard BBQer or home chef?
The first of the home trials was with boneless, skinless chicken breast. I sprayed the duck fat on the breast before using a savory chicken rub. Grill Grates were sprayed with some of the duck fat and then grilled over high heat until an internal temp of 165°. The savoriness that the spray brought along with the rub was outstanding. What could I use it on next — this question would soon find an answer. While in the poultry section of my local Wal-Mart it seemed obvious that the next trial should be turkey breast. This was another successful test as the skin crisped up per- fectly and the flavors were reminiscent of Thanksgiving dinner. However, for a true home test there needs to be more cooked than poultry so out came the cast iron. What else but burgers? The duck fat was sprayed onto the pan as well as on the burger patties. They were then seared in the pan over direct heat and created a crust that was nothing short of remarkable. The uses don't stop with meats as the spray can be used on vegetables such as grilled asparagus, Brussel sprouts, or others that can be grilled or roasted. My son even found a use for it by spraying on French fries be- fore baking in the oven.
As far as restaurant use goes it seems the BBQ world may be behind the times as some restaurants have been incorpo- rating the use of duck fat for several years (albeit, not the spray duck fat). I do believe that there is a place in the restaurant world for the spray once people discover the ease of its use, and other benefits as well. The high smoke point of 380° means
it can be used in a variety of cooking methods. It is also Keto, Weight Watcher, Paleo, Gluten-Free, and Whole 30 friendly — sure to attract consumers.
CornHusker Kitchens Duck Fat Spray, in my opinion, may be the next big thing in the BBQ culinary world — whether at a competition or to get a leg up. At home during a neigh- borhood cookout, cooking a small health conscience family dinner on the grill, or roasting almonds or pumpkin seeds for a snack. This is a product that should definitely be tried. It is available at most, if not all, Wal-Mart stores, numerous Ace Hardware stores,
specialty and hard-
ware stores across
the U.S. Online
sources include Ama-
zon, eBay, and a host
of other BBQ supply
stores. The price is
the only thing that
may be an issue
starting at $8.86 per
7 oz. can. But, with
the number of uses
available for this, this
is a bargain in my
eyes.
