The idea for Knotty Wood Barbecue Co. began in the backyard of the Defty fam- ily ranch in Woodland, CA. They saw that the massive almond groves sur- rounding their Northern California ranch homestead weren’t being utilized sustainably, and that tons of incredibly valuable cooking wood was literally going up in smoke during orchard turnover. As Almond Wood has long been coveted as a premium BBQ and smoking wood, they recognized that
their love for great BBQ and backyard cooking, and a commitment to local, sus- tainable farming success might all lead them to the same place.
Previously thought too dense of a hardwood to process into pellets, this pi- oneering family sought to develop their very own cus- tom pellet mill and be the very first to turn Almond Wood into pellets. Securing agreements with local farm- ers to source only the best orchard wood, investing in the necessary equipment to
harvest on-site, grind in-the-field, and trans- port the product the en- tire family devoted themselves to this proj- ect. Three years and millions of dollars later, they succeeded in build- ing their own pellet mill, customized to handle the hardness and unique characteris- tics of almond wood.
