Goats Cheese Salad with Bacon wrapped asparagus
Ingredients:
● 250g salad mix (your own choice of salad)
● 4 goat cheese logs 1 per person
● 2 avocados
● Handful of Radishes, sliced
● Handful cherry tomatoes, cut in half
● 12 Asparagus, 3 per person, you can add more or
less as desired
● 12 slices of bacon
● Seeds and nuts (sunflower, pumpkin, chia etc.)
● Olive oil and Balsamic vinegar
Method:
1. Wash the asparagus well, break off the hard part at the bottom and wrap with a slice of bacon each.
2. Get a frying pan over medium heat, add olive oil and fry the bacon asparagus.
3. Wash your salad, Cut the tomato, radishes and avocado.
4. Place the salad evenly throughout the four plates, add the cut up vegetables and
sprinkle with nuts, seeds, olive oil and balsamic vinegar
5. In a separate frying pan , while the asparagus is still cooking,drip a little olive oil and turn
to the highest heat
6. Place each goats cheese carefully and leave to caramelize on one side, time will vary
then when the bottom is caramelized like in the picture, flip it and allow to caramelize on
the other side
7. Place the caramelized goats cheese on top of the salad and then cross the asparagus
over the top like shown above
8. To eat it you can break the cheese up and mix or eat it separately. That is your own
choice, Enjoy
