id you know that Castle Rock has multiple locally owned restaurants with vegan options listed on their menu? We love spotlighting those restaurants, and we also
love giving tips on how to eat out when there isn’t anything speci conthemenu. Luckily,moreeateriesunderstand what it means when someone requests vegan or plant- based modi cations. We’ve been vegan for 10 and 8 years and it has been such a joy to watch this development over the years. One such place we ate at recently is Beau Thai II. We were happy to see that their online menu indicates vegetarian is available upon request. We were also excited to see that tofu was listed with their “meat” choices on a lot of their dishes. A quick call prior to visiting con rmed that they could prepare our choices vegan! We ordered the Spring Rolls and the Thai Panang. The spring rolls were full of fresh veggies and tofu and were served with a fantastic peanut dipping sauce. The Thai Panang was phenomenal! It was bursting with avor with tons of veggies and tofu that soaked up all the delicious curry (which we con rmed can be made without sh sauce). The lunch special, served with rice, was more than lling and even provided leftovers for a little snack later. We also enjoyed a cup of Thai Jasmine Tea together with our friends. The sta was extremely helpful and we observed a high volume of diners, so we bet it is a local favorite for all! Remember, if you’re trying to eat more plant-based foods, it is completely possible to have ful lling meals whether at home or dining out!
