   If you’re a coffee lover
like we are, you can
appreciate that Castle
Rock has multiple locally-
owned coffee shops.
Coffee, and seeing the
word vegan on any food/
product, are two of our favorite things! That’s why, when visiting Castle Rock Collective recently, and spotting a vegan baked good option, we just knew we had to share this information right away.
Their lemon loaf was moist and tasty with just the right amount of lemony flavor. Coupled with a fresh coffee, made for a delicious and satisfying treat. The dairy-free option
for coffee is oat milk, which has a fantastic smooth texture that just about anyone is sure to appreciate.
If you haven’t been to Castle Rock Collective, it is definitely a gem in our town. The Baristas are hired from the Wellspring Community, which the manager of the shop described as, “...a day program for adults with intellectual and developmental disabilities.” She also directed us to the website to check out their mission statement, About - Wellspring Community (wearewellspring.org).

While sipping your coffee, you can also shop at their market. There are many unique items including jewelry, clothes, pottery, cards, and more. The shop is also decorated with a lot of artwork and has a cozy atmosphere that is perfect for visiting with friends. They partner with another non-profit
calledworldorphans.org from where many of their market items come.
What’s not to love
about coffee, shopping,
trying a vegan goodie, and most importantly...supporting an organization that is working to make an inclusive world? When we spoke to the manager, she indicated that they may have more vegan options in the future. As of now, the vegan lemon loaf is often available (although not guaranteed). If you’re downtown and in need of a coffee, we highly recommend checking out this shop!
