There’s a new eatery in town and the name, Gluttony & Graze, was intriguing so we immediately checked out their menu! We just knew we’d be able to find something to eat that would satisfy our search for vegan, or easily veganized, food. We were right! This new food vendor is located at the Sinners & Saints bar in the Ecclesia building and has a huge menu of baked potatoes, salads, and more. We were lucky to be greeted by one of the owners who helped us find a delicious lunch. The Southwest Stuffed One Pound Baked Potato was easily veganized by leaving off the cheese and butter. It was packed with black beans, corn, peppers, and onions which made it filling enough to share! They also have several salad options on the menu and a hummus board. With such a variety, there is sure to be something for everyone to enjoy. The owner also explained that he owns Fish & Company in the same building. Evidently, their poke bowl is easily veganized as well! If you’re downtown Castle Rock and looking for a fun atmosphere with delicious food options, be sure to check out Ecclesia and these two restaurants!
