wenty years ago my 14 month old son Harley, was wasting away. I was heavily pregnant with my fourth child when Harley ended up in Chicago Children’s hospital in crit- ical condition. I started to prepare for delivering and losing a baby in the same week.
Fortunately a passing GI specialist asked to do a biopsy and diagnosed him with Celiac disease. We changed every- thing and I found that gluten free foods that were appealing and tasty were virtually impossible to nd. I loved baking and started adapting recipes.
Now as a single mom of 4 diagnosed celiac kids, two also with Aspergers and one with Raynauds, being able to be self employed doing something I love is a blessing!
We’ve gone from from a year of homelessness to now “mak- ing it” and donating 20% to Hog Haven Farm in Deer Trail.
