f you’re looking for gluten and dairy-free eats, look no further than No Cow Bakery in Castle Rock! We’re so lucky to have this bakery in our community. Most of their items are also vegan - a bonus for those eating plant-based! When they opened in 2018, they had a few vegan options, but quickly noticed that the vegan versions of the same items were selling better. They decided to switch to mostly vegan to cut down costs and meet customer demand. Luckily, there are a lot of ways to replace eggs when baking!
The display cases are lled with
so many delicious-looking baked
goods that it is always hard to
choose. We decided on a brownie,
blueberry mu n, carrot cake and
chickpea salad. Wow! The brownie
was especially good with a crunchy outside and a perfect chewy inside (What? This is gluten-free!?) The chickpea salad was one of the best we’ve ever tried. Their customer service is excellent and they always use the highest quality organic ingredients as possible!
When we spoke to the owner, Arthur Chavez, he mentioned that there are some exciting new food options including pizza coming soon! So keep an eye out, and please support local businesses. In the words of the owner, “Food is emotional” and we couldn’t agree more. We sure are excited to have a business in town that o ers choices to accommodate food
allergies, sensitivities, or preferences without sacri cing taste! • 24
