SANDHURST ANTIPASTO XMAS TREE
The Antipasto Xmas tree is a great way to share your favourite entrée items. It’s quick and easy to make and you can vary the recipe to suit your clients’ needs and dietaries.
The basic ‘tree’ is made from a mixture of cream cheese, onion powder, garlic powder, chopped Sandhurst dill cucumbers, chopped Sandhurst sun-dried tomatoes, diced Sandhurst red roasted peppers in brine, chives, parsley and salt, which is made between two layers of cling film and then moulded into a cone shape.
Refrigerate and after removing the cling film, decorate the tree with a combination of Sandhurst marinated mixed olives, Sandhurst sun-dried tomatoes, sprigs of fresh rosemary, and bocconcini,
and dressed with the oil from the sun-dried tomatoes. Top with a cheddar cheese star.
The Antipasto Xmas tree is perfect as a festive centrepiece of a charcuterie board surrounded by crackers, grissini, salami, or prosciutto.

'TIS THE SEASON WITH PORT MAHON
Port Mahon is the ideal ingredient to add some sparkle to your Christmas dishes. We understand that chefs don’t have hours to spend on preparation or complex development which is why we have created a restaurant-quality range of mayonnaise using free range eggs and the finest Australian sourced ingredients.
We recommend Christmas menu items that use fresh ingredients in a creative and on-trend way. Australians love fresh seafood plus it’s healthy which makes a nice change from other heavy Christmas menu items. We believe the perfect menu item is our Absolute Vodka, cucumber and chilli cured kingfish with Port Mahon aioli. It’s easy to create, has a wow factor and can be used as a entrée or main. The Port Mahon aioli is preservative-free, gluten- free and is versatile as it can be used to accompany many other menu items, for example French fries.
