Flavour of the month
FOOD labels have never been more dissected and discussed than they are today, and this has put ingredients suppliers in the spotlight like never before. But many of these companies are finding opportunities among the challenges, as they create healthier alternatives to staples like sugar, salt, and gluten, by developing new ranges of naturally-made colours, flavours and preservatives, and by catering to consumers’ country of origin concerns.
Our Rising Star this month, Noshu, is a prime example of
the movement. This company, which features on p16, has innovated, with help from its ingredients suppliers, in the
area of sugar-free bakery products.
Noshu also has some other non-negotiable criteria for its
ingredients: they must be certified non-GMO, and include nothing chemical or synthetic.
It’s smaller food and beverage brands like this that are driving much of the innovation in Australia, according to
the new local VP & GM of global ingredients company Kerry, Michele van der Walt. In our cover story on p12, she
reveals more on this and other big industry trends in ingredients innovation.
