Local action for global challenges
HELLO there.
When I first heard about Australia’s
inaugural Global Table conference, I knew I just had to get there. Four days dedicated to everything related to our food industry, from agriculture right through to growing meat without the animal – it was a must. There were some key take-aways from this event – mainly the need for collaboration, leadership, and determination. Former US Secretary of State John Kerry delivered a fiery keynote that held all of us to account for the state of our planet.
I know some of you have already stopped reading. We have climate crisis fatigue and are in the realm of ‘blah blah Ginger’ as famously depicted by Gary Larson in his The Far Side cartoon of man and his best friend.
But I hope shining a light on it in our own small way sparks your enthusiasm and vigour to look at what you do and ways you can lead in your workplace and industry to improve our planet’s future.
Skye Blackburn has been tirelessly educating people for more than a decade on the merits of edible insects, their nutritional starpower and environmental benefits. She recently clicked over talking to one million students while creating her Edible Bug Shop business (see page 30).
Consultant Katherine Teh’s article (page 16) on how the sugar industry needs to not shy away from the negative aspects of its product shows how we are starting to see the rise of commercial consciousness.
Our Food Export feature (pages 32-38) has some great advice
for those looking to expand beyond our shores and the success
story of The Good Crisp Company that initially happened by accident.
It is also time to catch up on the world of snacks. Industry consultant Mark Field walks us through some of the key trends unfolding at
