High protein and low salt success
Australian family-owned Manildra Group has added high protein premixes to its The Healthy Baker range and collaborated with Coles on significantly reducing salt in its bread range. Kim Berry reports.
MANILDRA Group has introduced high protein pancake and muffin premixes, as well as a high fibre wholemeal plain flour mix, to its The Healthy Baker range of flours.
The protein-packed range is made from 100 per cent Australian GMO-free wheat. The pancake mix has 15 grams of protein per serve while the muffin base mix has 10 grams. Both are free from artificial colours, flavourings or preservatives.
Manildra Group director Caroline Honan says the mixes are for everyone. “This has revolutionised the pancake category, with the introduction of a wholesome basic mix for all the family. From fitness enthusiasts and health-conscious consumers replenishing their bodies, to parents adding extra protein to their children’s diets for better growth and nutrition.”
The Healthy Baker Protein Muffin Base Mix just needs water, oil, eggs, and your favourite fillings. It also has added prebiotic fibre for gut health.
The Healthy Baker Wholemeal Plain Flour Mix has 65 per cent more fibre than standard wholemeal flour and also contains a prebiotic.
Honan says using Manildra’s resistant starch, made from 100 per cent Australian wheat, has enabled the company to significantly boost the fibre content and gut health benefits of the wholemeal flour mix.
The pancake and muffin mixes are stocked in re-sealable bags, while the flour is packaged in air-tight and durable PET-containers, suitable for re-use and produced in the latest robotic packing lines at its flagship Manildra Flour Mill in central west New South Wales.
COLES COLLABORATION
After two years of recipe and ingredient revisions, Coles has reduced the salt content in 46 of its Coles in-store bakery products by up to 25 per cent, or 76 tonnes a year.

Manildra Group director John Honan says the company was proud to partner with Coles to produce a healthier and softer bread recipe.
“Our white bread mix uses 100 per cent Australian wheat and is lower in salt. This product has been specially
created to manufacture bread products that arguably provide market leading crumb softness, texture
and eating qualities in the Coles Super Soft, Crusty and Savoury range,” Honan says.
Coles general manager for bakery Andy Mossop says the company has worked hard to create the new recipe, while “maintaining great quality, value, and taste for customers”. ✷
