the industry. It was my absolute pleasure this month to find and speak to some of Australia’s brightest young front-of-house sparks,
from waiters to bartenders, managers and sommeliers. Alongside our fabulous regulars, in our flipped issue you’ll find recipes from some of the country’s best young bartenders, service advice, sustainability tips, and interviews with the incredibly talented young floor staff we found in top fine diners. I’m tremendously excited by what the next generation of front-of- house staff will bring to the table in the coming years. Let’s get behind them.
