Mediterranean Stu ed Zucchini
Serves 4
Directions
Cut the zucchini long ways and scoop out the middle with a spoon, set aside on wax paper on a baking tray.
Chop the zucchini from the middle into small pieces.
Fry the tomato paste with zucchini pieces, pepper, olives, capers and tomatoes in a pan with the rosemary, thyme and oregano.
S r for about 10 minutes and the place the mixture in the scooped out zucchini.
Brush the edges with oil.
Bake in the oven, gas mark 4/180 degrees, for about 20/30 minutes un l the Zucchini are cooked through.
Serve with fresh chopped Parsley.

Recipe 10
2 Large Zucchini per person, 2 halves each
2 Tablespoons Cooking Oil
2 Tablespoons Tomato paste
10 Olives, chopped
2 Tomatoes, steamed, skins removed and chopped. (Boil the tomatoes and when the skins start to split, drain and remove the rest of the skins and the stalks)
1 Red Pepper chopped
3 Sprigs Fresh Thyme, leaves removed 1 Sprig Rosemary, leaves nely chopped nely with scissors
1 Tablespoon Italian mixed Herbs or Oregano
Few capers
Parsley- chopped to garnish
Salt and pepper
