Ingredients
4 Raw Beets Medium
8 Carrots Medium
1 Large Bag Mixed Greens
2 tablespoons sesame seeds Olive oil

Roast Beet & Carrot Salad

Directions
Peel the beets and carrots and chop into pieces. Place on wax paper in an oven dish and roast for 30/40 mins, text with a skewer or fork to check they are cooked through.
Place the mixed greens in a bowl, place the roast veg on top and sprinkle with sesame seeds. Before serving toss with a li le olive oil. You can serve the salad with the roast veg either hot or cold.
