4 Zucchini per person
2 Yellow Bell Pepper, roasted and sliced 4 Sun Dried Tomatoes, sliced
1 Tablespoon Extra Virgin Olive Oil

Zucchini Ribbon Salad
serves 4
Directions
Cut the ends o  the zucchini. Using a potato peeler, ‘peel’ the zucchini into ribbons.
Place in a bowl, add the yellow pepper and the sundried tomatoes. Add the olive oil, and mix in carefully. Add salt and pepper if desired, and serve.
