Aug. 22 (UPI) -- Ethel Caterham, the world's old- est living person and the oldest British person ever on record, celebrated her 116th birthday in Surrey, England.
Caterham was certified as the world's oldest living per- son by Guinness World Records and LongeviQuest on April 30, following the death of Brazilian woman Inah Canabarro Lucas at the age of 116.
Caterham celebrated her 116th birthday on Thursday.
Her sister, Gladys Babilas, died at the age of 104 years and 78 days in 2002.
Caterham outlived both of her own daughters, but has three granddaughters and five great-grandchildren.
A spokesperson for the care home where Caterham lives said she would not be giving any interviews for her birthday, opting to instead spend the day celebrating with her family. The representative said Caterham would make an exception if King Charles called.
Caterham, who holds the Guinness World Records for the oldest living person, oldest living woman and oldest British person ever, was once asked for the secret to her long life by the Salisbury Journal.
"Say yes to every opportu- nity because you never know what it will lead to. Have a positive mental atti- tude and have everything in moderation," she said.

Aug. 22 (UPI) -- A festival in a Mexican city served 13,215 tacos in one hour, and in the process also broke the Guinness World Records for the largest stir- fry and the largest frying pan.
The La Discada 2025 festi- val in Guadalupe, Nuevo León, involved a team of 100 culinary students using a 23-foot diameter frying pan to prepare a stir-fry dish called la discada, which contains sausage, beef, pork, bacon, toma- toes, peppers, onions and
beer
The stir-fry cooked for three hours and 40 minutes over a wood fire and the 5,331 pounds of cooked food were then turned into tacos served to the festival's 10,000 attendees.
The event earned
three Guinness World Record titles: the most tacos served in one hour, the largest stir-fry and the largest frying pan.
The leftover tacos from the event were donated to local food banks.
