New Business:
Garlic Mashed-Potato Gratin
Ingredients
4 tablespoons unsalted butter
5 pounds russet potatoes, peeled and diced 12 cloves garlic
1 1/2 cups heavy cream
1 cup grated Parmesan
4 ounces cream cheese, at room temperature 1/2 cup chopped chives
Salt and pepper
How to Make It
Step 1
Grease a 3-quart ovenproof dish with 1 Tbsp. butter. In a large pot, cover potatoes and garlic with cold water and add 2 tsp. salt. Bring to boil and cook over medium heat until tender, about 30 minutes. Drain and return potatoes and garlic to pot.
Step 2
While potatoes are cooking, bring cream, grated Parmesan and 2 Tbsp. butter to simmer in a medium saucepan, stirring until Parmesan melts. Remove mixture from heat and set aside. Preheat oven to 350°F.
Flag Project- Henry will spend up to $1,000 to purchase 2,000 American flags to put out throughout the subdivision for Flag Day, or possibly for Memorial Day
Zoom Meetings – Ed suggested we purchase an annual subscription to Zoom for $125.00 per year which will allow us to have unlimited virtual meetings throughout the year in case it continues to be a necessity during the current crisis. He also suggested we set up Executive Committee meetings monthly through Zoom, as well. Board approved the purchase.
The next monthly business meeting of the Shenandoah Homeowners Association Ltd. will be on Tuesday, May 12, 2020 at 7:00 p.m. This meeting will also be a virtual meeting through Zoom.
