Chicken and Spinach Pita Pizza
INGREDIENTS
4 whole wheat pita bread
1 tin Condensed Low Fat Cream of Chicken Soup 1 tablespoon basil pesto,
1⁄4 teaspoon ground black pepper
450 grams chicken breast
2 roma tomatoes, diced into small pieces
150 grams shredded mozzarella cheese
450 grams fresh baby spinach, loosely chopped 25 grams Parmesan cheese (optional)
SERVES: 4
TOTAL TIME: 25 Minutes
INSTRUCTIONS
Begin by preheating your oven to 200°C/400°F/gas 6. Line a baking sheet with greaseproof paper.
In a large bowl thoroughly mix the soup, pesto and black pepper.
Spread an even amount of the mixture onto each pita to cover then top with chicken, tomatoes, spinach and cheese.
Arrange on the baking sheet and cook for 10-15 minutes until crisp on the bottom and cheese is melted and bubbling.
Serve immediately.
