Asian Slaw with Sesame and Ginger Dressing
INGREDIENTS
21⁄2 tablespoons rice vinegar
2 tablespoons soy sauce
11⁄2 tablespoons maple syrup
1 teaspoon toasted sesame oil
1 teaspoon sriracha (optional)
1 tablespoon freshly grated ginger 1 garlic clove, minced
1 kilograms shredded cabbage (red, green or a mix) 2-3 medium carrots, shredded
1 medium red bell pepper, sliced into thin strips
2 spring onions or scallions, chopped
Handful chopped fresh coriander 1 teaspoon toasted sesame seeds
SERVES: 8
TOTAL TIME: 15 Minutes
INSTRUCTIONS
To create the dressing, mix the rice vinegar, soy sauce, maple syrup, sesame oil, sriracha, ginger and garlic together in a small bowl.
Place the cabbage, carrots, bell pepper, scallions and cilantro into a large mixing bowl and combine
Pour the dressing over the vegetables and mix well to ensure everything is evenly coated.
Taste and adjust any seasonings to your liking.
Sprinkle with the toasted sesame seeds and serve immediately
     If you’re not much of an ‘onion’ fan half the spring onions or scallions in the recipe or omit them completely.
