Cucumber and Pomegranate Salad
INGREDIENTS
2 large cucumbers
A good handful of coriander, chopped The seeds of 1 pomegranate
3 tablespoons of extra-virgin olive oil The juice of 1 lime
1 spring onion, sliced
1⁄2 teaspoon of salt
A pinch of black pepper
50 grams of feta cheese
SERVES: 5
TOTAL TIME: 20 minutes
INSTRUCTIONS
Begin by peeling the cucumbers and halving them lengthwise. Scoop out the seeds using a spoon and then cut the cucumber into slices. In a large bowl, combine the cucumber with the coriander, pomegranate seeds, olive oil, lime juice, spring onion, salt and pepper. Mix well and serve with feta crumbled on top.
