 Grilled Tilapia with Couscous
SERVES: 4
TOTAL TIME: 20 Minutes
INSTRUCTIONS
Combine the lemon juice, oil, garlic, 1⁄2 teaspoon salt, and 1⁄4 teaspoon pepper in a bowl, then add the tilapia and toss to coat. Allow to marinate for 10 minutes.
While the fish marinates, cook the couscous according to the manufacturer’s instructions. Once cooked remove from the heat and stir in the parsley and sun-dried tomatoes.
Next, heat your grill to high and grill the tilapia on an oiled rack until cooked through.
Serve hot with the couscous and lemon wedges.

2 tablespoons fresh lemon juice, plus wedges for serving 1 tablespoon olive oil
2 cloves garlic, chopped
Salt and pepper
4 x 170 gram tilapia fillets, split lengthwise 150 grams couscous
1 tablespoon fresh flat-leaf parsley, chopped 2 tablespoons sun-dried tomatoes, chopped
