My inspiration is to see people, friends and famliy enjoy the food that I cook.

I enjoy working with my team of cooks, create and develop recipes together.
I think is very important to listen to new ideas specially if you make everyone involved.
 Since when you have been working in food industry
My culinary carear started 30 years ago when I first arrived to New York City.
I started working at Orso Restaurant under the supervision of my mentor Chef at the time Julie Lumia. I found the love and passion for food, thinking that working in the food industry was making me become a better human being and have much more respect for the food we eat.
You are base in New York buzzing hell’s kitchen neighborhood, Are you inspired by the hip vibe of your surroundings
Im inspired for what’s going in Hells kitchen, but also on what’s going on in New York city. This beautiful city can give you with real culinary trip, thank to the diversity of culinary backgrounds from people of around the world that migrate to the city.
Tell us about the story of Joe Allen.Hello Victor let’s start talking about which characteristics should a successful chef possess?
Joe Allen restaurant is classic tavern and comfort food establishment named after his founder. The restaurant is known as a Broadway meeting place for working actors theatre staff and fans.Creativity, attention to detail, care and respect of the product, accept criticism, care for the costumers and co-workers.
