RISKS
Guests may request food to be specifically prepared without ingredients which could lead to an allergic reaction.
Chef must be able to prepare special menu request with full knowledge of products and ingredients that may contain the allergenic ingredients.
Allergenic ingredients and products (e.g. Nuts) should be stored in a manner to ensure that there is minimal risk of cross contamination of other ingredients, and food products.
Tools, utensils, crockery and equipment used for preparing and cooking of dish(es) for guest(s) with special request due to food allergy must be cleaned and sanitized before usage.
