Purchases from Common Market Place
a) Refers to purchasing of Daily Fresh Produce/Seafood directly from the wet or local market or not a regular food supplier/store/establishment/seller.
b) Hotel must not purchase any food from market that is not under the inspection of local Municipal/Health Ministry or do not possess approved vendor license.
c) Results of the visit and checks should be discussed during the SFS meeting, where decisions on whether to proceed with regular purchases would be made by the General Manager. Where audits are scored a Fair rating and/or have CARs that cannot be met, the General Manager must make the decision on how to proceed.
