RISKS
Ice machine may present difficult cleaning problems. The complexity of some of the working parts, the time allocated for cleaning and the nature of the soil deposits have often resulted in machines being imperfectly cleaned. Deep cleaning should be performed on a regular base to prevent bacteria build up on the inside of the ice machine that may contaminate the ice.
ICE MACHINE POLICY
a) Ice machine is only for storage of ice for consumption.
b) Icemachineistobekeptcleanandsanitaryatalltime.
c) Ice machine is to be kept closed or covered.
d) Rubber gasket or sponge on the lid to be kept clean and in working condition.
e) Ice scoop must be stored in a separate sanitary container with sanitizing solution. Sanitizing solution should be changed as per schedule and recorded.
f) Ice scoop must be in good and sanitary condition. Ice scoop must be secured/affixed to prevent from its removal/loss.
g) Ice bin must not be used to cool any bottle or container.
h) Cleaningandsanitizingoftheicestoragepartofthemachine(includingtheoneinHorizon Club and Colleague Restaurant) is done by Stewarding department weekly.
i) Cleaning and sanitizing of the ice making part of the machine is done by Engineering department monthly.
j) Cleaning records, or copies, must be available in plastic files with each ice machine.
