    November Recipe Pumpkin Cake
Ingredients:
4 eggs
1 2/3 c sugar
1 c canola oil
1-15 oz can pumpkin
2 c flour
2 t ground cinnamon
Dash of nutmeg
2 t baking powder
1 t baking soda
1 t salt
1⁄2 c unsalted butter, softened 8 oz cream cheese, softened 1 t vanilla
3 c powdered sugar
Directions:
Beat eggs, sugar, oil & pumpkin until blended. Combine flour, cinnamon, baking powder, baking soda & salt; gradually add to pumpkin mixture; mix well. Pour into ungreased 15”x10” baking pan. Bake at 350 for 25-30 minutes. Cool completely.
Icing:
Beat cream cheese & butter, stir in vanilla, then stir in powdered sugar. For an added kick, stir in one tablespoon of Pumpkin Pie Spice.
Spread icing on cooled pumpkin cake and enjoy!
