The more daunting the challenge, the further you have to reach for the inspiration that will catapult you forward.
Pressure Cooking
 B y January 2020, I had circled the dates for the Scottsdale Winter Meeting on my calendar. I planned to spend time lounging by the pools there, and I wanted to work my physique into a shape that belied my age. I figured that, if I got myself halfway to decent shape by March, then I could actually be in decent shape in time
for the July Annual Meeting in Bermuda.
Getting in shape requires culinary sacrifices – especially after the damage that I inflicted on my body during the holiday season. My “no cookie left behind” policy wasn’t going to cut it for Scottsdale. So out went the barbecue; in came broccoli. Instead of steaks, I ate sea bass. You get the idea.
Speaking of sea bass, I would regularly get whole fish from the supermarket, which put me halfway to a reasonably healthy dinner. I would oil up a few carrots, put them in a roasting pan with salt and pepper, and cook them at 450 for 20 minutes. Then, I would add a layer of sliced onions, lemons, and herbs, and the fish would go on top. If I were feeling sophisticated, I might add some chopped onions or some capers, and that would be dinner.
