 CHEF’S ISLAND GARDEN
Margaret Winter
Are you dreaming of summer? You’re not alone. Twenty-four Chefs’ Gardeners are dreaming along with you. The herbs we grew and harvested last season were dried by the chefs and are still in use in the kitchen. Soon, planning will start when we all meet to discuss next summer’s crop. But before that, Margaret Whitfield, Susan Howson and Libby Bullock will get together with Chef Michael to learn what favourite herbs and vegetables he would like us to grow for use in our Harbourview Room. Libby Bullock will draw a “map” so that we will know what to plant where. I will keep the edges straight and all of us will share the joy of organic gardening. We have several Crew Captains who take turns to oversee and direct us in the garden activities each week. After all, many hands make work light and enjoyable.
In November, after the harvest, before the ground freezes and the snow flies, the last job is to plant the garlic which grows over winter and comes up early in the spring. We were four hardy souls this year. Libby Bullock with her stellar planning, Kathrine Moran who bought the garlic buds to plant, Debra Appleton and myself completed the crew. The ground was tilled, breaking the frost in the top layer, lines were drawn, cavities created and garlic cloves safely put to bed. We were bundled up against the chill of the day and finished the job in just over an hour with stakes set to
mark the garlic plot. Till the growing season comes again, dream on.
