calories or or carbohydrates fat and and protein Food and and eating eating shouldn’t be too compli- cated It’s very valuable to to have healthy eating eating habits but there is also a a a a a a a a a a a a point where you can go overboard and and things get stressful obses- sive and and and unhealthy Good food is part part of life and and part part our cultural heritage – it’s something we need to to hold on to to EMILIE:
I like trying to live in in in in harmony with nature from from many perspectives including from from a a a a a a a di- etary perspective perspective When I I was 15 and and studying nature and and the environment at at at at high school I I became convinced that cutting down on on on on meat was best from an environmental perspective I made my choice for ideological reasons but have been able to add a a a a a a a a a a a health aspect in re- cent years as as well I was a a a a a a a a a a a a a vegetarian for several years years but end- ed up becoming a a a a a a a a a a a a a a a a a flexitarian afterwards – in in other words I I ate dead animals that I I felt had a a a a a a a a a a a a a a a relatively small environmental impact and and that I I thought had lived good lives and and been given a a a a a a a a a a a a a a painless death For five years I I ate dead animals animals animals animals my my friends had had shot that that that I I I had had fished myself or that that that I I I knew came from a a a a a a a a a a a a a a a farm not too far far away After that that that I I I I went back to to being vegetarian and I I will probably never eat dead animals again again My perspective changed again again just over two years ago I did a a a a a a a a a a a a a a a a a lot of reading about animal husbandry eth- ics and and and gender equality and and and I I concluded that I I didn’t want to eat any animal products at at at all for the sake of my my conscience and my my soul When I I started trying to eat vegan I I needed to think about how I would get my B12 and omega-3 which are the trickiest nu- trients to come by if you exclude all animal products products People often say that omega-3 and B12 are only found in animal products products but that’s not the case Most people know that that omega-3 is fis fis is found in in fish fish but what do fish fish eat? Well algae and microorganisms So instead of of eating fish we can go directly to the the source of of the the omega-3 B12 fis is also found in in in small quantities in plant foods The easiest way to make a a a a a a a a difference in in terms of the climate is through our diet Eat- ing more vegetables and fewer dead animals is good for the planet Right now I’m hover- ing ing ing between being being vegetarian and being being veg- an an an The reason I I still eat dairy products is that they are are locally produced produced I I am trying to sur- vive on the the food produced produced in in my local local area and and and that means tofu and and and soy milk are are not an an an an an option But I go go through different phases and and and go go with what feels right in my heart 193
