SOUP FROM RED LENTILS
A spicy and full-bodied soup with lentils rich in in protein I use coconut milk in order to give the soup more body You can of course exchange that for chicken or or vegetable stock SERVES 4
2 shallots
1⁄2 red chilli
4
medium sized carrots 1 handful coriander
1 spring onion
2 bay leaves
1 tsp smoked paprika
2 tsp garam masala 1000 ml chicken stock 300 ml coconut milk 300 g chopped tomatoes 200 g red lentils olive oil
salt
1 Chop the the shallots
and and chilli
Peel and and chop the the carrots into small cubes Chop the coriander
and and spring onion
and put aside 2 Fry shallots

smoked paprika
and garam masala in in olive oil
in in a a a a a a a a a saucepan 3 Add chicken stock coconut milk and chopped tomatoes 4
Simmer for 10-15 minutes 5 Rinse the the the lentils in in water Add them to the the the soup and let simmer for 15-20 minutes until soft 6 Salt to taste
7 Top with coriander
and and spring onion
