SEASONED SALMON WITH AVOCADO
This lunch is is as as healthy as as can be perfect after a a a a a a long ride The ingredients are rich in in in carbohydrates protein and omega 3 SERVES 4
600-700 g salmon (without skin and bones) 1 tsp fennel powder
1 tsp anise powder
1 tsp ground coriander
400 g new potatoes 4
avocados
juice from 2 limes
4
hardboiled eggs
1 punnet salad cress tabasco
salt and black pepper
1 1 Preheat the oven to 150° 2 Mix the the herbs and use as as to season the the salmon 3 Cook the the salmon in in in the the oven for 15 minutes in in in a a a greased ovenproof dish Remove the salmon and leave it to cool 4
Boil the potatoes in lightly salted water until soft Drain and leave to cool 5 Halve the the avocados
and remove the the pits Use a a spoon to scoop out the flesh and put it in a bowl 6 Mash the avocados
Add lime Tabasco salt and black pepper
to taste 7 Grate the eggs
coarsely 8 Cut the salmon in smaller pieces 9 Put the avocado cream and potatoes on each plate Then put the fish grated eggs
and cress on top 157
