TARTE TATIN
This pie was created by by the French sisters Tatin by by mistake at at at the the end end of the the 19th century They intended to make an ordinary apple apple pie but the the the apples got burnt on the the the stove Panicking they covered the the apples with puff pastry baked it it in the the oven and served it upside down! The rest is is history and today Tarte Tatin is a a classic dessert 1 APPLE PIE (SERVES 4)
5 yellow apples (Cox Orange Pippin) 200 g g caster sugar
100 g butter
a a pinch of cinnamon
1 puff pastry sheet
1 1 Preheat the oven to 180° 2 Peel the the apples and cut them into four wedges
of equal size Remove the core 3 Make a a a a a a caramel sauce using the butter
and sugar
in in in a a a a cast iron frying pan Stir continuously so that it doesn’t burn 4 Place the the apple wedges
into the the caramel 5 Dust with cinnamon
6 Cover with a a a puff pastry sheet
and put the pan in in the oven Bake for 35-40 minutes 7 Flip the pie and serve it immediately 181
