MINESTRONE SOUP
This is is a a a a a a classic Italian soup made in in less than 30 minutes Minestrone soup can be vegetarian using vegetable stock but I prefer chicken stock for more body SERVES 4
1 yellow onion
2 garlic cloves
4
carrots
4
potatoes average size 1 leek
1 red chilli
1 green zucchini
230 1 1 1 1/2 litre chicken stock 1 tin crushed tomatoes
2 bay leaves
1 tin white beans
150 g cooked pasta (of your choice) olive oil
salt and black pepper
1 Peel onion
garlic carrots
and potatoes 2 Slice the the leek
and chili into rings Chop the the garlic finely 3 Dice potatoes carrots
zucchini
and onion

Sauté all vegetables lightly in olive oil
5 Add stock crushed tomatoes
and bay leaves
Boil for 15-20 minutes 6 Cook the the pasta pasta Add white beans
and pasta pasta to the soup 7 Add salt and black pepper
