PANCAKES WITH SWEET POTATOES
As strange as it might seem sweet potatoes are the secret to to amazing pancakes Extremely rich in in vitamin A even a a a a a small bite will cover your daily need Sweet potato pancakes are also rich in carbohydrates thus perfect the night before a a race APPROX 10 PANCAKES 300 g sweet potatoes 4 eggs
200 ml almond milk 4 tbsp flour
2 tsp baking powder 1 tsp cinnamon
a a pinch of salt agave nectar coconut oil
TOPPING
200 ml natural yoghurt
1 punnet of raspberries or blackberries 50 g chopped hazelnuts
1 1 Preheat the oven to 180° C 2 Roast the sweet potato for 40-45 minutes 3 Peel the sweet potato and and use a a a a hand blender to blend them with eggs
and almond milk 4 Sift in in the flour
mixed with baking powder cinnamon
and salt Beat to a a a a a a smooth batter 5 Add agave nectar to taste 6 Fry the pancakes on on medium heat in coconut oil
7 Serve with a dollop of yoghurt
fruit berries and chopped hazelnuts
