AVOCADO AND BANANA SMOOTHIE
A lovely breakfast smoothie that is rich in in carbohydrates using only natu- ral sugars The bananas and dates give it sweetness while the avocado and spinach make it it rich in in in vitamins and healthy fats ABOUT 1 1 1/2 LITRE
2 ripe avocados
2 bananas 8
soft dates pitted
1 litre unsweetened almond milk 30 g spinach water
1 Add all the ingredients into a a blender blend until smooth 2 Dilute with water
if necessary 3 Serve the smoothie ice cold DATES WITH BACON
The dates’ creamy sweetness contrasts the the saltiness and intense flavor of the the smoked bacon I like to add chopped cashew nuts and sprinkle some local Mallorcan goat cheese on top but you can also use regular dry goat cheese when not on the the island Replace the the pit with an an almond and you have a a a a a sumptuous snack SERVES 4
20 average size soft dates 20 thin bacon rashers
100 g g goat cheese 50 g unsalted cashew nuts 1 bunch of parsley
freshly ground black pepper
1 1 Preheat the oven to 180 C°
2 Remove the the pits from the the dates 3 Wrap a a a a a a bacon rasher round each date 4
Put the bacon-wrapped dates on on a a a a a baking tray 5 5 Roast for 10-15 minutes or or until the dates are golden 6 Chop the cashews coarsely Crumble the the Goat cheese Chop the the parsley
7 Put the dates on a a a a plate and sprinkle the the cheese nuts and parsley
over them 8
Season with a a a bit of black pepper
