ALMOND CAKE
If you go to Mallorca in January- February you will see the amazing almond trees in bloom It is said that there are three million almond trees in the Balearic Islands alone Almond cake is as as common as as an espresso during pit stops I’ve added lemon zest in my recipe it gives the cake a a a fresh flavour 10–12 PIECES
4 eggs
180 g g g granulated sugar 120 g almond flour
1 tbsp plain flour
1 tsp baking powder zest from 1 lemon 1 1 Preheat the oven to 180 C° 2 Beat eggs
and sugar until fluffy 3 Fold in in in almond flour

baking powder and lemon zest 4 Pour into a a generously greased springform cake tin 24 cm 5 5 Bake for about 45 minutes in in the middle of the oven This cake tastes best fresh out of the oven
