WHITE BEANS IN TOMATO SAUCE WITH BAKED EGGS
You get a a protein rich start to the day with this dish Like Heinz beans but much tastier! Serve with toast or baguette SERVES 4
4
shallots
1 red chilli
600 g chopped tomatoes

tbsp tomato purée
400 ml water
2 bay leaves
400 g boiled small white beans (tinned) sherry vinegar
8 eggs
salt and black pepper
olive oil 1 bunch of chives
1 1 Preheat the oven to 160 C° 2 Finely chop shallots
and chilli
3 Add chopped tomatoes
tomato tomato purée
water
and bay leaves
Let boil to a a a a a a full-flavoured sauce 4
Add the beans and season with vinegar
salt and black pepper
5 Spoon a a a hole in the the middle of the the sauce and break the eggs
into it 6 Put the the entire pan in the the oven and cook for 10-15 minutes 7 Top with chopped chives
8 Serve immediately
