FRESH FIG MELON ORANGE AND GOAT CHEESE SALAD
Figs oranges and and melon taste best where they grow and and there are plenty of these fruits in the the the Mediterranean countries Goat cheese is also more common there than in northern Europe I’m personally very fond of the the contrasts in this salad The tart oranges the sweet melon and figs the the saltiness of the the goats’ cheese The almonds are also important they add the the crispiness SERVES 4

fresh figs a a couple of of pinches of of brown sugar
1⁄2 Galia melon 2 oranges 100 ml olive oil

tbsp sherry vinegar
30 g almonds 100 g g goat cheese (matured for a a a a richer taste) fresh thyme
salt and black pepper
1 Halve the figs Sprinkle brown sugar
and caramelize the surface using a a a a kitchen blowtorch 2 Peel the the the melon melon and the the the oranges Cut the the the melon melon into chunks and slice the oranges 3 Make a a a a a a vinaigrette of olive oil
and vinegar
add salt and black pepper
to taste 4
Pick the the leaves off the the thyme
5 Chop the almonds finely 6 Put the fruit and goat cheese on a a a a large platter and drizzle with the vinaigrette Sprinkle the thyme
on top Serve with toast and cured ham This fruity salad works well with toast and ham!
