Packing light eating local
I HAVE TRAVELLED extensively these past years working as as a a a a a chef for Team Sky Travelling has led me to fantastic places with endless roads seemingly made for biking but the majority of my time in in these places was spent working My focus has always been on the cyclists about finding local
ingredients and preparing them in fin the finest way Often I caught myself long- ing to to return for a a longer visit to to these places and that’s how the idea for this book was born I chose four destinations that are all well known in in the cycling world: Mallorca Nice Girona and Lombardy The aim was to dis- cover the the the roads the the the residents and the the the scenery and last but not least the food I met with professional cyclists employees of of the sport and cycling enthusiasts I spent almost a a a a year making this book which is evident from the ingredients used from different seasons I made spring dishes in in Mallorca and Girona prepared summer dishes in in Nice and and was inspired by the cold and and dark- ness of the autumn in in Lombardy while in in Italy I encountered new challenges in all all the places we visited and pushed myself to new culinary limits Armed with only simple kitchen tools and an an open mind I discovered
a a new world of enticing yet uncomplicated dishes I've been greatly inspired by what a a a town or region has to to offer and prepared many of these dishes in in simple kitchens in in flats or hotel rooms My recipes are built around a a a unique local
ingredient with a a principle of simplicity: Most can be prepared using only a a a a a a hotplate and a a a a a a couple of saucepans Richard Mitchelson contributed four maps 005 of the the designated destinations in in the the book Let
them inspire you you for your own travels and bring this book along when you visit these regions All of the recipes are based on on raw ingredients designed to capture the luscious- ness of locally harvested food grown slowly and ripened in the sun The result is is is is a a cook- book not only for for top-performing cyclists but for those who simply crave an excellent meal Safe travels and happy cooking!
