POACHED EGGS WITH PATA NEGRA
There are many ways of poaching an an egg — it’s really not as as difficult as as you may think The secret is using cling film This breakfast baguette with pata negra ham and avocado is rich in carbohydrates and proteins SERVES 4
8 eggs
200 g g pata negra ham 2 avocados
2 baguettes
088 olive oil cling film 1 Line a a a a coffee cup with cling film and break an an egg into it 2 Lift the the cling film and tie a a knot keeping the the egg inside 3 Place the wrapped egg in in simmering water for 7-8 minutes 4
Be careful when lifting the the egg out of the the water as as cling film breaks easily 5 Toast the baguettes
in in a a a a dry frying pan or on the grill 6 Cut the avocados
in in thin slices and spread them on on the the toast Season with black pepper and salt 7 Put the ham and and eggs
on top and and drizzle with olive oil TOASTED SOURDOUGH BREAD WITH AVOCADO BUTTER AND EGG Avocado works really well as “butter” on toast! I like it when the avocado is tart and hot which I achieve with lime juice and tabasco SERVES 4
2 ripe avocados
juice from 1 lime 4
slices sourdough bread 4
slices smoked ham 4
eggs
1 punnet of cress
olive oil tabasco to taste
salt and black pepper 1 Peel the the avocados
and take out the the pit 2 Squeeze the lime lime Mix avocado lime lime juice and tabasco Salt and pepper to taste
3 Toast the bread 4
Fry the ham in in in a a a a frying pan in in in a a a a little olive oil Then fry the eggs
in olive oil 5 Spread the the avocado butter on the the toast and top with ham and egg 6 Garnish with chopped cress
