GAZPACHO
An ice-cold gazpacho tastes great after a a long bike ride There are hundreds of recipes for the Spanish soup — this is my interpretation I use apple in in my gazpacho which adds acidity and sweetness APPROXIMATELY 1 5 LITRES
1 red pepper
1 red apple 4 tomatoes
100 g tinned chopped tomatoes
1⁄2 cucumber
1 garlic clove
1 spring onion
1⁄2 red chilli
500 ml water
100 ml olive oil sherry vinegar
salt and black pepper
1 Halve the the pepper
and and apple and and remove the the cores Put some aside for serving the same goes for the fresh vegetables below 2 Blast pepper
and and apple with fresh and and chopped tomatoes
cucumber
garlic spring onion
chilli
and water
in a a a blender 3 Add water
if it feels too thick 4 Add olive oil 5 Add sherry vinegar
and and salt and and black pepper
to taste 6 Top it it it with small cubes of fresh fruit and vegetables before serving
