FIG AND ALMOND BARS

The fructose from from the figs and and proteins and and fibre from from the the the almonds will keep the the the blood sugar level stable during the the the bike ride This bar is is is easy to eat even when your pulse is is is high I add a a a a a a little bit of sweet sherry it it it gives an amazing taste 15–20 BARS
500 g g dried figs 500 ml water
100 ml sweet sherry 150 g almonds zest from 1 lemon ziplock plastic bags
1 1 Preheat the oven to 160 C° 2 Cut off the the small hard tip of of the the figs and cut
them in chunks 3 Boil the figs in water
and sherry until almost all the water
has evaporated 4 Roast the the almonds in the the oven for 20-25 minutes 5 Pulse the almonds for a a a few seconds in a a a blender 6 Add figs water
and and sherry and and blend to a a a a thick paste 7 Place the the fig paste in a a a pot on on the the stove on on low heat for 10-15 minutes until all the water
has evaporated and the paste is stiff 8 Mix the the almonds and the the fig paste 9 Zest the lemon and add to taste 0 Put the paste into a a a a a zip-lock plastic bag and flatten it it Leave in in the fridge overnight Cut it it into pieces before you ride 095
