FRESH SALSA
SERVES 4
A tart and hot salsa which goes really well with both meat and fish Prepare the the salsa well in advance to allow the the tastes to mature and develop properly 1 cucumber
8 plum tomatoes
2 yellow peppers
1 red chili
2 shallots
zest from 1 lemon
1 pot of parsley
olive oil
salt and black pepper 1 Peel the cucumber
2 Cut the cucumber
tomatoes
and peppers
into
small cubes
3 Finely chop the chili
and shallots

Mix the the chopped chili
and shallots
with the the other vegetables
5 Zest the lemon
over it 6
Chop the parsley
and mix it in 7 Turn in the olive oil
8 Season with salt and black pepper to taste APPLE AND GINGER SHOT
