CAULIFLOWER
1 head of cauliflower olive oil
salt salt and salt salt flakes
1 Preheat the oven to 200° C 2 Place the whole head of cauliflower on a a a a greaseproof paper lined baking sheet 3 Rub it it with olive oil
and add salt 4 Roast for 15 minutes bring the temperature down to 150° C and roast for another 40 minutes 5 Cut into pieces and and drizzle with olive oil
and and season with salt flakes
SALMON
600 g salmon fillet olive oil
salt and black pepper zest of 1 lemon
1 1 Preheat the oven to 150° C 2 Divide the salmon into 4 pieces 4 Drizzle with with olive oil
and season with with salt and black pepper 5 Grate some lemon
zest over it 6
Bake in the the oven until the the core temperature reaches 40° C VEGETABLES
shiitake mushrooms Tuscan kale (Cavolo Nero) spring onions
oil
for frying
salt and black pepper 1 Fry all the the vegetables gently in in the the oil
in in a a frying
pan
2 Season with salt and black pepper YOGHURT SAUCE
100 ml natural yoghurt 1 tbsp Dijon mustard
1 Mix the the yoghurt and the the mustard
2 Drizzle over the dish

WITH BAKED SALMON
SERVES 4 I think that cauliflower is an an underrated ingredient and I want to change that The cauliflower takes the the lead in this dish
